Preparation method
- 1Place the oil in a large saucepan over medium heat. After two minutes, add the onion and garlic, and stir well until golden brown.
- 2Add cardamom, cinnamon, cloves, and bay leaves, and stir for a minute. Then add the peppers and carrots and stir the ingredients.
- 3Add cumin, coriander, black pepper, salt, and turmeric after two minutes.
- 4Add the meat, stirring occasionally, then add the tomatoes and leave for ten minutes.
- 5Add warm water, tomato sauce and dried lime and stir well.
- 6Cover the pot and leave the ingredients on low heat until the meat is cooked.
- 7We start preparing the Kabsa rice in another pot after the meat is cooked. We add the rice, then add the prepared meat broth, salt, and saffron on top.
- 8Leave the ingredients until the rice is cooked. This may take 40-45 minutes or more, depending on the type of brown rice. Then add the black pepper and stir well.
- 9Place the rice and cooked meat on top of it in a serving dish. You can garnish it with toasted almonds to make the meat kabsa ready to serve.
