- 1Heat vegetable oil and roast the almonds and pine nuts in a saucepan until golden brown, then remove them from the saucepan and set aside.
- 2Season the fish with a little salt and olive oil, add the olive oil to the previous pan and fry the fish until cooked, then set it aside.
- 3In the same pot, fry the sliced onions until they turn golden brown and crispy. Set aside two tablespoons of the onions for garnish.
- 4Add the fried fish to the same pot, add 4 cups of hot water and the onions, cover the pot and leave it for 30 minutes until the onions become soft.
- 5Remove the fish from the pot and about half a cup of broth, then add the rice, cover the pot, and leave it to cook for 25 minutes over low heat.
- 6Place the rice in a serving dish, then add the fish, fried onions, and sauce. Garnish with pine nuts and almonds and serve hot.
